Carol Longley, Assistant Professor
Dietetics, Fashion Merchandising, and Hospitality
Carol Longley received a bachelor's degree in dietetics from Iowa State University. She completed her dietetics internship at the University of California Hospital in San Francisco. She completed a Masters of Social Work at the University of Iowa and her doctoral degree in Foodservice and Lodging Management in 2007 from Iowa State University.
Prior to her teaching career, she held positions in schools, nursing homes, and hospitals as a clinical dietitian, consulting dietitian, and foodservice director. She also was a dietitian for a food distributor and worked for a counseling agency offering group and private counseling for eating disorders.
Dr. Longley has authored articles published in the Journal for Child Nutrition and Management, the Journal of the American Dietetic Association, and the Journal of Foodservice Management and Education. Her research interests include childhood obesity and school nutrition management.
She serves on the advisory board of the National Foodservice Management Institute and is a program reviewer for the Commission on Dietetic Education. She served as president of the Illinois Dietetic Association.
